Chef Boyardee Taco-Roni Recipe
Chef Boyardee is something you will most likely find in our pantry. A lot of times, I buy the small microwave bowls for the boys to take to with them to the babysitters because they are convenient or for an occasional lunch. But have you ever thought about using Chef Boyardee in a recipe? I’d never given it much thought, but Chef Boyardee offers some great recipes that are super simple to make. It’s a constant battle as to what the kids will eat, and I was positive that they would like the Taco-roni recipe. It reminds me a lot of Taco Soup, took about 3 minutes to prep it, and was on our table within 20 minutes of me starting. How’s that for easy?

Below you will find the recipe for Chef Boyardee Taco-Roni. The original recipe calls for a can of diced tomatoes. My boys wouldn’t touch tomatoes with a 10 foot pole, unless it is sauce or ketchup, so I improvised. I added a can of tomato sauce, 1/2 tsp more of cumin for taste, and opted for fresh sliced tomatoes on mine and my hubby’s since we both love tomatoes.

An explosion of fiesta flavors in an easy dish that's sure to please adults and kids.
Ingredients
  • 2 can (15 oz each) Chef Boyardee® Beefaroni®
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes, drained (I omitted, and used an 8 oz can of tomato sauce instead)
  • 1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed
  • 1 cup frozen whole kernel corn (I used canned corn)
  • 1 teaspoon ground cumin
  • ¼ cup shredded reduced fat Mexican cheese blend
  • ½ cup broken yellow tortilla chips
Instructions
  1. Place beefaroni, drained tomatoes, beans, corn and cumin in large saucepan; stir to combine.
  2. Bring to a boil over medium-high heat. Reduce heat, cover and simmer 15 minutes. Sprinkle with cheese and broken chips just before serving.
Notes
You can add extra cumin to taste. I prefer to use 1½ tsp. You can also add fresh chopped tomatoes to the top when you add the chips and cheese if you want to substitute them for the diced tomatoes.

 

Overall, this is definitely a meal I would make again. It’s only 249 calories per 1 cup serving, and if you add cheese and a few chips, you have a meal for under 400 calories. It’s one that the kids really liked, and they both ate well.The only drawback is that there is quite a bit of sodium in this recipe. I’d love to see Chef Boyardee come out with a lower sodium option in their canned pasta.  Be sure to check out the other Chef Boyardee recipes.

    What a great, kid friendly, recipe. I’ve always been a big fan of “almost” homemade recipes; ie the ones which use some sort of prepackaged food as a base. They’re GREAT for quick meals one days I have to work at the office. Thank you for sharing this one. 🙂
