Wish-Bone Vinaigrette Dressings
Salad is something that I eat at least a few times a day. I love experimenting with new flavors and ingredients. It’s also a definite plus that it’s good for me. I’m also the type of shopper that will buy a new salad dressing when I see it, and then will be creative with my salad I make. This last week, I was excited to have a Wish-Bone salad sampler party. My guests and I were able to sample 4 new fabulous dressings from Wish-Bone that include:
- Superfruit Berry Vinaigrette
- Mediterranean Italian Vinaigrette
- Bruschetta Italian Vinaigrette
- Greek Vinaigrette
My mom, two sisters, and I each made a salad for a family reunion dinner this last week. We ended up having 21 taste testers instead of just the 4 of us, and the salads that we made were a hit. We each had a salad to make with a new Wish-Bone dressing. My salad was a Greek Chicken Salad. It included things like greek yogurt, cucumber, tomato and chicken. It was really yummy, and one that I would make again, but there were 3 other salads that we made including a Panzanella Bruschetta Salad, Super Fruity Beet and Pear Salad, and the Mediterranean Roasted Vegetable and Shrimp Salad.
Mediterranean Roasted Vegetable and Shrimp Salad
I wanted to share this recipe with you since it ended up being my favorite. Loved the dressing, all of the veggies, and the fact that it had shrimp.
- ½ cup Wish-Bone® Mediterranean Italian Vinaigrette Dressing, divided
- 2 large tomatoes, cut into wedges
- 1 cup thinly sliced fennel or celery
- 1 large zucchini, halved lengthwise and sliced
- 2 large shallots or 1 small onion, sliced into thin wedges
- 1 cloves garlic, finely chopped
- 1 lb. cooked large shrimp
- 1 Tbsp. lemon juice
- 8 cups arugula or baby spinach leaves
- Preheat oven to 425°.
- Toss ¼ cup Wish-Bone® Mediterranean Italian Vinaigrette Dressing with tomatoes, fennel, zucchini, shallots and garlic in 13 x 9- inch shallow roasting pan. Roast, stirring once, until vegetables are tender, about 25 minutes. Stir in shrimp and lemon juice. Roast until shrimp are heated through, about 5 minutes.
- Toss arugula with remaining ¼ cup Dressing in serving bowl. Top with shrimp and vegetables. Garnish, if desired, with chopped fresh basil.
