Homemade low sodium chicken noodle soup

Comfort foods of Fall are one of my favorite things. However, I like to mix my recipes up to keep them healthy. Although I do have canned chicken noodle soup in my food storage, I really don’t like how much sodium they contain and the fact that ingredients just sit there forever. I have a homemade chicken noodle soup that I love to make that uses fresh ingredients and a low sodium or no sodium broth. The taste is still fabulous, and my kids aren’t getting bombarded with copious amounts of salt. I make my noodles from scratch and the soup takes about 35 minutes from start to finish.

A low sodium homemade chicken noodle soup
Ingredients
  • 8 cups low sodium chicken broth (Can also use low sodium granules or Herb-Ox sodium free granules.)
  • 2 cups carrots, chopped
  • 4 stalks celery, chopped
  • 2 boneless skinless chicken breasts
  • 1⅔ cup flour (can use whole wheat for whole wheat noodles.)
  • 2 Tbsp water
  • 2 eggs
Instructions
  1. Place boneless skinless chicken breasts in oven and cook at 400 for 30 minutes
  2. Meanwhile, make noodle dough by combining the 1 and ⅔ cups flour, 2 Tbsp water, and 2 eggs.
  3. Beat until consistency is like dough
  4. Roll out dough on a floured surface so that it is almost paper thin
  5. Using a pizza cutter, cut strips for your noodles.
  6. Combine broth, carrots, celery and noodles in pot.
  7. Bring to a boil and boil for approximately 8 minutes or until noodles taste done and vegetables are tender.
  8. Remove chicken from oven and tear into pieces. (After chicken is baked all of the way through.)
  9. Add to broth, noodle and veggie mixture.
  10. Add pepper for extra taste
