I love scalloped potatoes, aka funeral potatoes. They are a huge comfort food to me, but I don’t love how many calories that they have in them. I found this fabulous Slow Cooker Scalloped Potatoes recipe, and changed it up to make it quite a bit more healthy. The original recipe called for a cube and a half of butter! I switched it up to only 2 Tbsp. My arteries would not be thanking me later in life on that one if I used that much butter everytime I cooked. 😉 I was a bit apprehensive that this recipe wouldn’t turn out as well because of the fact that I mixed the recipe up, but it was absolutely perfect, and I will be making it again.

Funeral potatoes is a “Mormon” colloquialism. People make them alot for food for funeral luncheons, hence the name. They are yummy though.

This time of year I’m ALL about crock pots. This sounds like a great recipe which I’m sure I’ll try in the upcoming weeks. What’s best about it, is that it’s ingredients are items I usually always have on hand. On a side note, I’ve never heard them called “funeral potatoes” and I got a chuckle out of that phrase 😉
