I love scalloped potatoes, aka funeral potatoes. They are a huge comfort food to me, but I don’t love how many calories that they have in them. I found this fabulous Slow Cooker Scalloped Potatoes recipe, and changed it up to make it quite a bit more healthy. The original recipe called for a cube and a half of butter! I switched it up to only 2 Tbsp. My arteries would not be thanking me later in life on that one if I used that much butter everytime I cooked.
I was a bit apprehensive that this recipe wouldn’t turn out as well because of the fact that I mixed the recipe up, but it was absolutely perfect, and I will be making it again.
- 1 (2 pound) package frozen shredded hashbrowns.
- 1 (10.75) can Campbell’s 98% fat free cream of chicken soup
- 1½ cups 1% or skim milk
- ¾ cup 2% shredded cheese
- 2 tablespoons butter
- ¼ cup chopped onions
- ¼ tsp salt
- ⅛ tsp pepper
- Combine hashbrowns, soup, milk, cheese, butter, onion, salt and pepper in large bowl.
- Pour in a greased 5 qt slow cooker.
- Cover and cook on low 4½ to 5 hours or until potatoes are tender
- Salt and pepper to taste











These look really tasty and not very difficult to make. I like any recipes using potatoes. They are so cheap!

Funeral potatoes is a “Mormon” colloquialism. People make them alot for food for funeral luncheons, hence the name. They are yummy though.

This time of year I’m ALL about crock pots. This sounds like a great recipe which I’m sure I’ll try in the upcoming weeks. What’s best about it, is that it’s ingredients are items I usually always have on hand. On a side note, I’ve never heard them called “funeral potatoes” and I got a chuckle out of that phrase
