I love making banana bread. One of the reasons is because of the smell that fills the house. YUM. Another reason is because I think it’s about the simplest bread that you can make. As easy as making cookies. I found a healthified banana bread recipe and decided to make it. I call it healthified because it still has a cube of butter, so it isn’t 100% healthy. 😉 However, it does have nonfat yogurt, flax seed and calorie free sweetener. I tweaked the original recipe to make it my own and it was delish. Of course, I got a little anxious and got it out a bit too early so it fell a bit in the middle.
- 2 cups all purpose flour
- ¾ teaspoon baking soda
- ½ tsp salt
- 1 cup no calorie sweetener like splenda or truvia
- ¼ cup butter, softened
- 2 large eggs
- 3 cups mashed ripe bananas
- ⅓ cup non or low fat vanilla yogurt
- 2 tsp vanilla
- 2 Tbsp ground flax seed
- Beat sugar and butter in large bowl until blended
- Add eggs, 1 at a time and beat
- Add banana, yogurt and vanilla, beat until blended
- Add flour, baking soda, and salt - Mix until blended well
- Add flax seed
- Spoon into bread pan coated with cooking spray
- Bake at 350 for 1 hour or until wooden toothpick comes out clean when inserted into the middle.
- Cool 10 minutes in pan on wire rack and then remove from pan

Looks like a great recipe but doesn’t look done all the way in the middle. Must need to bake it a bit longer.
Yeah, I mentioned that in the post. I was a bit anxious and got it out early and that’s why it fell in the middle. It was still delicious though!
