This Slow Cooker Teriyaki Chicken Drumsticks was a recipe that I hadn’t tried before. It was originally shared by Little Miss Bossy on the Betty Crocker website here. I made a few minor variations to make it a tad bit more healthy. I added much less oil and used extra virgin olive oil, added less brown and regular sugar, and used less of and low sodium soy sauce. This had an incredible kick to it and the whole family loved it. The original recipe says to refrigerate and marinate for at least 2 hours, I would suggest doing it overnight. Without further ado, here is the recipe with the alterations I made:
- ½ cups sugar (I suggest using a no calorie sweetener like truvia.)
- ½ cup packed brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- ½ cup low sodium soy sauce
- 1 cup water
- ¼ cup pineapple juice
- ¼ cup extra virgin olive oil
- 10-12 chicken drumsticks
- In a large bowl, mix all ingredients except chicken. Add chicken and toss to coat.
- Refrigerate at least 2 hours. (overnight suggested)
- Remove chicken from marinade, and place in slow cooker. Add about 1 cup of the marinade and discard the rest.
- Cover, cook on high for 4-5 hours or on low for 7-8 hours.
- Serve over rice with vegetables. Can use leftover marinade to pour over rice and chicken.
