Pasta for me is a comfort food, but with added sauces and creams, the caloric value can quickly add up. I’ve got another recipe here from Robin Takes 5: 500 Recipes, 5 Ingredients or Less, 500 Calories or Less, that will satisfy your pasta cravings at only 419 calories per serving. It’s a pretty sensible dinner that gives you 17 grams of protein, 5 grams of fiber, 11 grams of fat, and is very low in sodium. Plus, it’s super simple and can be done from start to finish in a half hour.
- 12 ounces bow tie pasta
- 1 bunch asparagus, stem ends trimmed and spears cut into 2-inch pieces
- ¼ cup grated Parmesan cheese
- 2 tablespoons garlic-flavored olive oil
- Preheat Oven to 400 degrees
- Cook pasta according to package directions, drain and keep warm
- Meanwhile, immerse asparagus in a pot of boiling water and cook for 2 minutes.
- Drain, transfer to a baking sheet, and top asparagus with Parmesan cheese.
- Bake 10 minutes, until cheese is golden brown
- Toss the pasta with the olive oil and Parmesan-crusted asparagus.
- Season to taste with salt and freshly ground black pepper before serving.
