Broccoli & Brussel Sprouts Casserole.
It’s that time of year. Thanksgiving, Christmas and New Years are all right around the corner. It’s a time of family and friends, food and fun. With the cooler weather and the holidays, I love comfort foods. Casseroles are at the top of my list when it comes to cooking for my family. Country Crock sent a kit to help me get a head start on the holidays. They also sent a recipe for a Family Fave Veggie Casserole. I took the recipe and changed it up a bit to reflect some of our favorite veggies. It is definitely a great side dish for any holiday meal. The fun part about this recipe is that you can add a creamed soup to make it more of a casserole, or omit the creamed soup to make it roasted veggies. Whatever you do, this recipe is sure to please. I even got my boys to eat brussel sprouts which was a first!
- -1 large head of broccoli, cut into pieces
- -1 dry pint Brussel sprouts, cut in halves
- -1 can Cream of Mushroom soup
- -1 cups parmesan cheese, ½ cup reserved
- -1 medium onion, finely chopped
- -3 Tablespoons Country Crock
- -1 cup seasoned Panko Bread Crumbs
- Boil Broccoli & Brussel Sprouts for 5 minutes, or until crisp/tender
- Drain and mix together in bowl with soup, ½ cup parmesan cheese and onion.
- Spread mixture into 9x13 casserole pan
- Over low heat, mix butter and panko bread crumbs
- Cook until bread crumbs are slightly browned
- Sprinkle bread crumbs over casserole
- Bake at 350 degrees for 30 minutes
