Pistachio Mint Pudding Pie
To this day, a favorite treat of mine is pudding. It’s simple to make and satisfies my sweet tooth. With two fun holidays coming up in March, I thought it would totally be appropriate to come up with a pudding pie recipe. You might be wondering what two holidays I am referring to. Pi Day is March 14th and St. Patrick’s Day is the 17th. I put together a delectable collection on foodie that can help give you some inspiration on a simple dessert for after dinner, to take to a get together, or for pi day or St. Patricks Day.
It just makes sense to eat pie on Pi day and if you have some of this leftover green treat a few days later for St. Patrick’s Day, it’s a double win. You could also just make this pie again because it’s not one that lasts long, at least not at our home.
Pistachio pudding happens to be one of my favorite types of pudding. I combined it with another love of mine, andes mints, and found a match made in heaven. I present to you Pistachio Mint Pudding Pie.
- 1 3.5 oz box Pistachio Pudding
- 1½ cups milk
- 1½ cups cool whip
- 15 Andes Mints, chopped
- 1 Premade Chocolate Graham Crust
- 1 cup Cool Whip
- In a large bowl, mix together pudding mix, milk, whipped topping and half of the Andes Mints.
- Pour into chocolate crust
- Freeze for 2 hours or until desired firmness is obtained
- Use remaining cool whip to top pie
- Sprinkle with remaining Andes Mints
Between myself, husband and two boys, this pie made it a whopping 2 hours in our house. It was THAT good. It took me about 10 minutes to put together and then was ready to eat after 2 hours in the freezer.

Pistachio is my favorite nut and they are good for you. This pie is pretty as well as sounding delicious, I would love it.
I have to say that Pies are my favorite dessert, especially cream pies. This pie looks so delicious! I make my Banana Cream Pie over the weekend and it was so delicious. I like using real ingredients in my pies. I love the chocolate crust and the mints! YUM!
Oh my goodness, it has been forever and a day since I have had pistachio pudding. This pudding pie recipe looks devine and I must try it soon. Maybe this Sunday!
