Mexican Sunday Dinner
Things can get pretty hectic during the week and we don’t always get to sit down to have dinner as a family. Sunday is the one day that we almost always guaranteed to sit down and have family dinner. It’s a day that I look forward to and love being able to spend that quality time with my family. It just so happens that we all love Mexican Food. Burritos, tacos, beans and rice are a few of the staples we have in our house at any given time. I’ve compiled some Mexican Recipes at Foodie that would be perfect for Sunday dinner and you can see them below.

 

 

A friend gave me this Shrimp Tacos With Mango Salsa recipe years ago and it’s one of our favorites. It takes a traditional taco with a corn tortilla and mixes the element of seafood. It also includes a fruity spin of mango salsa and the flavors go so well together. It also just looks really pretty which makes it even easier to gobble up.   The prep time is only about 15 minutes from start to finish too so it’s easy to throw together.  I mixed up a few things from the original recipe and use coconut oil instead of olive oil.  I personally like the taste of it better and coconut oil is better to cook with.

Shrimp tacos with a delicious mango salsa.
Ingredients
  • 8 corn tortillas
  • 1 lb precooked shrimp
  • 1 tbsp butter
  • ½ tbsp coconut oil
  • 1 mango, cubed
  • ½ red onion, chopped
  • ½ cup chopped cilantro
  • 1 package cherry tomatoes
  • 1 lime: juice & zest
  • 1 bag shredded cabbage
  • ½ cup shredded cheddar cheese
Instructions
  1. Mango Salsa:
  2. In a bowl combine cubed mango, chopped onion, & chopped cilantro. Half the tomatoes and add. Zest lime over salsa and then squeeze out juice as well. Mix.
  3. Shrimp:
  4. Heat butter and coconut oil over med/high heat. Arrange shrimp in a single layer and cook just until heated through.
  5. Heat tortillas for 15 seconds in microwave to warm and keep them from breaking.
  6. Add shrimp to tortilla followed by cabbage, salsa, and cheese!
