Mother’s Day Breakfast in Bed
May is a very special month as we get to celebrate those women in our lives who have done so much. I love being able to celebrate my mom. Although she lives out of state, she was here the last few days, cleaning, helping me tame my yard and spending time with her grandkids. If there is one thing I could give to my mom or that I could have as a mom on that special day, it would be breakfast in bed. Foodie has you covered with a ton of delicious recipes, and I’ve compiled a collection of drool worthy breakfast foods that would be perfect to serve mom on her special day.
As part of the collection, I have a delicious recipe to share with you that my mom and I made together while she was here. The concept is simple: make ham and egg quiches in muffin tins and serve over a hash brown waffle.
- 6 Eggs
- 3 Green Onions, chopped
- 1 Red Pepper, chopped
- ½ cup shredded cheddar cheese
- 12 pieces thinly sliced ham
- 1 bag frozen hash browns
- Spray muffin tin with non stick spray
- Line each muffin tin with a piece of ham
- Beat together eggs, green onion, red pepper and cheddar cheese
- Pour egg mixture into each muffin cup until it is ¾ of the way full
- Bake at 350 for 20 minutes
- To make hash brown waffle:
- Place frozen hash browns in waffle iron and cook until hash browns are browned.
- Carefully remove waffle and place it on a plate and serve ham quiche over it.

My husband isn’t much of a cook, so I usually get cereal (or eggs that I’ve cooked for myself). I don’t mind though, I love to cook! One of my favorites is the baked omelette.
