Bacon Wrapped Chicken

Ingredients:

  • Boneless Skinless Chicken Breasts
  • Cream Cheese
  • Bacon

These are SO super easy and delicious, and one of my favorite recipes. Wrap each of your chicken breasts in saran wrap and pound down with meat tenderizer to thin meat out. (By wrapping with saran wrap, it keeps the chicken from falling apart.  Don’t pound it too thin though!)  Unwrap from saran wrap.  Spread top of chicken breast with cream cheese. I’ve used regular and sour cream and chive. They are both delicious! Wrap chicken up and place in baking pan with seam side down. Wrap with bacon. I like to use the precooked kind. Cook at 375 degrees for 40 minutes or until chicken is no longer pink.   You can also put a toothpick down the middle and grill these up if you want.  Serve with your favorite veggie!

My grandma passed away about a year and a half ago.  When she was in the last bit o her life, I got to help take care of her and it was a special experience.  Here she is with Chandler when he was a baby.  It’s fun to look back and remember how amazing she was.
