Ham Quiches With Waffle Hash Browns

  • 6 Eggs
  • 3 Green Onions, chopped
  • 1 Red Pepper, chopped
  • ½ cup shredded cheddar cheese
  • 12 pieces thinly sliced ham
  • 1 bag frozen hash browns
  1. Spray muffin tin with non stick spray
  2. Line each muffin tin with a piece of ham
  3. Beat together eggs, green onion, red pepper and cheddar cheese
  4. Pour egg mixture into each muffin cup until it is ¾ of the way full
  5. Bake at 350 for 20 minutes
  6. To make hash brown waffle:
  7. Place frozen hash browns in waffle iron and cook until hash browns are browned.
  8. Carefully remove waffle and place it on a plate and serve ham quiche over it.
